Hot Cross Buns
Ingredients
Dough:
- 500g strong white flour
- 10g instant yeast
- 60g caster sugar
- 10g salt
- 200g lukewarm milk/water
- 1 egg, beaten
- 50g melted butter
Paste:
- 50g plain flour
- 50g water
Method
1. Put the flour in a large bowl with the salt, cinnamon and sugar on one side and the yeast on the other.
2. Mix in the milk slowly with one hand followed by the egg and melted butter to make a shaggy dough.
3. Transfer to the bench and start to knead the dough using one hand to hold the dough and push it away with the palm of the other hand. Keep rotating the dough and do this for about 10 mins to achieve a smooth dough. Mix in the fruit at the last minute.
4. Transfer to a lightly oiled bowl, cover with a damp tea towel or clingfilm and leave to rise until doubled in size.
5. Light fly flour the bench and tip out the risen dough. Weigh it into 100g portions and shape into tight balls.
6. Place onto a baking tray lined with baking parchment and leave to rise either covered or in a draught free area until doubled in size.
7. Preheat the oven to 220C/200C fan
8. Make a thick paste with the remaining flour and water, transfer to a piping bag and make a cross on the top of each risen balls.
9. Bake for 18-20 mins and leave to cool slightly before eating.
