Jasper Castel's Satay Skewers

Ingredients

400 gr chicken cm2 cubes

Small onion finely chopped

2 cloves of garlic finely chopped

50 mls of sweet soy sauce

Table spoon sambal (chilli paste)

2 tsp ground coriander

2tsp ground cumin

2 tsp ground ginger

Tbls sugar

Method

Mix all the ingredients together and add the diced chicken. Leave to marinate for at least 30 minutes.

Skewer on pre soaked skewers.

Sate sauce

Onion finely diced

3 cloves of garlic finely diced

Tbls ginger

Tbls lemongrass

Tbls sambal

250 mls Coconut cream

300 gram Peanut butter

Sugar

Soy sauce

Method

Fry of the onion for a few minutes, add garlic and spices and cook for another minute or two.

Add the coconut, peanut butter and sugar and heat through.

Add splash of soy sauce at the end.
