Daniel Ap Geraint
Daniel was born in Prestatyn, North Wales and is now head chef of The Gunroom restaurant in Caernarfon, which is fast becoming one of the most popular restaurants in Wales.

Food was a huge part of his upbringing, and he was particularly influenced by his Nain (Welsh for grandmother), whose cooking was wholesome and full of flavour.
Daniel has always been creative, and when he left school he went on to study Music, Theatre and Media. However, after working in a kitchen during his university summer break, he realised that his real passion was for working in kitchens.
He went on to work at an award-winning gastro pub near Llandudno, before becoming head chef for the first time at only 23 years of age. A few years later Daniel took the plunge and opened his own restaurant, which was quickly added to the Michelin Guide and The Good Food Guide.
In 2018, Daniel joined the team in The Gunroom kitchen with a view to developing their offering. Changing the menu every month to reflect the most abundant produce from the local area, and creating a unique nine-course hybrid taster menu that he has become so known for. During his time in charge of the kitchen, the restaurant has received a number of awards and recognitions including being added to the Michelin Guide in 2022, gaining two AA rosettes and winning the AA Wine List Award for Wales 2024/25.
Celebrating seasonal Welsh produce is at the heart of Daniels cooking, and every dish he cooks in the competition is representative of this.
