Jimmy discovers the secret to making prawn crackers. Prawn Crackers have been handmade in Asia for generations from a mixture of prawn puree and tapioca dough. The tapioca flour contains starch which gives the crackers their crunch. But to produce prawn crackers on an industrial scale, food factories speed things up using massive amounts of pressure in a machine called an extruder.
