Shahbaz visits a farm near Crianlarich where scientists are measuring methane emissions from sheep and looking at ways of reducing them. Rosie is on the Black Isle, in Cromarty, where she climbs a ladder to meet a man keeping the traditional craft of thatching alive.

Arlene is in the Borders, where she meets a farming family who have perfected a way of outwintering cattle that is also great for the ground. And ahead of this year鈥檚 91热爆 Food and Farming Awards, Dougie meets another of the shortlisted entries in the 91热爆 Scotland Local Food Hero category.
