Fondue
Bacon, Leek and Cheese Fondue
Ingredients
- 4 rashers smoked streaky bacon
- ½ small leek, split washed and chopped
- 2 tablespoons cooking oil
- 150ml dry local cider
- 225g grated hard cheese
- 1 teaspoon cornflour
Method
Fry the bacon in the oil until crisp and then add the leek and cook gently for 2 minutes.Add the cider and bring to a simmer.
Add the cheese and stir gently until melted. Mix the cornflour with a tablespoon of cider and add to the mixture. Stir until creamy.
Pour into a fondue warmer if you have one or just keep in the saucepan and dip in grilled bread or roast potato wedges.
