Bacon Buttered Chicken

Smokey bacon buttered grilled chicken with grilled corn cream

Smokey bacon butter

75g smoked streaky bacon chopped
1 tablespoon cooking oil
½ onion, peeled and chopped
1 clove garlic, minced
2 teaspoons honey
2 tablespoons balsamic vinegar
125g butter
1 tablespoon chopped chives

Fry the bacon gently in the oil until crisp and golden. Add the onion and garlic and cook until soft. Add the honey and vinegar and cook until the liquid has evaporated. Cool and blend with the butter. Mix in the chives.

Chicken

4 chicken breasts

Brush with oil and season with salt.
Cook on a grill or bbq until cooked through. Place on a tray and add a tablespoon of butter to each. Rest for 5 minutes before serving.

Grilled Corn Cream

½ onion, finely chopped
25g butter
4 chopped scallions
1 teaspoon mustard seeds
2 corn on the cobs
Oil for brushing
100ml chicken stock
2 tablespoons crème fraiche

Cook the onion in the butter until soft and golden. Add the scallions.
Cook the corn in boiling water for 5 minutes. Drain and brush with oil.
Place on a hot grill pan or bbq and cook until the outside is scorched.
Remove corn from husk.
Add the mustard seeds to the onions and cook for 30 seconds.
Add the cooked corn and stock and simmer for 5 minutes.
Blend with the crème fraiche and serve topped with a sprinkle of smoked paprika.
