Briony's Butter Beans Three Ways
‘Marry Me’ Butter Bean Pasta
Ingredients:
- 400g pasta
- 1 tin butter beans, drained and rinsed
- 2 tsp smoked paprika
- 2 tbsp lemon juice
- 2 tsp mixed herbs
- 1 tsp onion granules
- 2 tbsp grated parmesan
- 1 tbsp rapeseed oil
- 1 tbsp plain flour
- 4 sun dried tomatoes
To finish:
Handful fresh basil
Grated parmesan
Method:
- Cook the pasta as per the directions on the packet with a drizzle of oil and a teaspoon of salt. Drain but keep a cup of the starchy pasta water.
- Place the butter beans, smoked paprika, lemon juice, mixed herbs, onion granules, grated parmesan, rapeseed oil, a pinch of salt and pepper, flour and half the reserved pasta water in a blender (or in a bowl and use a stick blender) and blitz until smooth.
- Chop the sun dried tomatoes. Stir the sauce and sun dried tomatoes through the cooked pasta and heat until warmed through, add the rest of the pasta water to loosen the sauce if needed. Serve topped with fresh basil and grated parmesan.
Posh Baked Butter Beans - Serves 4
Ingredients:
- 1 tin butter beans, drained and rinsed
- 1 tin chopped tomatoes
- 2 tbsp tomato paste
- 2 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp cumin
- ½ tsp salt
- 1 tsp yeast extract
- Pinch black pepper
- 4 eggs, poached/fried
- 4 slices toasted sourdough
Method:
- In a saucepan, add the paprika, coriander, cumin, salt, a generous pinch of black pepper, tomato paste, yeast extract and heat for a minute until fragrant and combined.
- Add the chopped tomatoes and 100ml boiling water and stir frequently until thickened. -Stir through the butter beans and cook for a further few minutes.
- Pour over sourdough toast and top with eggs.
Butter Bean Brownies - Serves 12
Ingredients:
- 1 tin butter beans, drained and rinsed
- 3 eggs
- 3 tbsp cocoa powder
- 125ml rapeseed oil
- 200g light soft brown sugar
- 200g self raising flour
- 1 tsp vanilla extract
- ½ tsp salt
- 2 tsp instant coffee + 100ml boiling water, mixed
- 100g dark chocolate chips
Method:
- Oven on to 180C fan/200C. Grease and line a 20x30cm brownie tin.
- Place all the ingredients apart from the chocolate chips in a blender (or in a bowl and use a stick blender) then blitz until completely smooth.
- Stir through the choc chips then pour into the prepared tin.
- Bake for 25-30 minutes.
