Chopping board

Citrus fruit, especially oranges and grapefruit, are sometimes segmented for presentation purposes. They're used in salads, jellies, desserts, or as a garnish.
-Slice off the top and bottom of the orange to create a flat surface.
-Stand the orange on a chopping board. Run the blade of a sharp knife down the inside of the orange skin, following the shape of the orange and cutting slightly into the flesh. Remove all of the skin, strip by strip, in this way.
-Hold the orange in the palm of one hand. Run the blade down the inside of each segment in a V-shape, keeping the blade flush with the membrane that separates each segment, until all of the segments have been cut from the orange.
