Food Thursday - Turkey and Black Bean Chili

Ingredients:

Turkey mince 500 g
Black bean 1 can rinsed and drained
Onion, diced 1 medium
Peppers, diced 2 small
Garlic minced 2 cloves
Tomato puree 1 Tbs
Chopped tomatoes 1 can
Ground cumin 2 tsp
Chili powder 1 Tbs
Ground coriander 陆 tsp
Smoked paprika 1 tsp
Salt and pepper to taste
Dried oregano 陆 tsp
Chicken stock cube 1
Olive oil 2 TBS

Garnishes:

Red Leicester or cheddar, grated
Fresh coriander, chopped
Sour cream
Sliced green onions
Rice
Tortilla chirps

Method:

- Mix spices in a small bowl and leave to the side
- Heat olive oil in deep, thick bottomed pot over med/high heat. Add turkey, and sprinkle with pinch of spice mix and a good pinch of salt. Brown mince and strain but do not wash pot.
- Return the empty pot to the stove and saut茅 onion and peppers for 2 minutes, then add garlic and a bit more spice mix. Saute two more minutes and add rinsed and strained beans, tomato puree, canned tomatoes plue 陆 tin of water, stock cube and more spice mix. Let simmer 20 minutes over low heat.
- Taste throughout cooking and add more seasoning if needed. Serve over rice with grated cheese, green onion, sour cream, coriander and tortilla chips.
