Hawa Talbot is originally from Guinea in West Africa, but since moving to the UK has struggled to find anything as good at the chili sauce she used to have with almost everything at home.

She's recently recreated her family recipe sauce and hopes to share it with the world, emulating the success of fellow food entrepreneur Levi Roots.

Her chicken drumstick recipe us a classic Guinean dish best served with some sort of scotch bonnet based hot sauce.

Ingredients:

Serves 5 people

  • 700g Fresh chicken drumsticks
  • 1 fresh lemon
  • 4 cloves of garlic
  • 1 tsp of Oregano
  • 1 tsp of paprika
  • 2 tsp of self-raisin flour
  • 1tsp black pepper
  • 1tsp of basil
  • 1tsp of onion granules
  • 1tbsp olive oil
  • 2tbsp of Djembe sauce or other scotch-bonnet based hot sauce

Salsa salad:

  • 2 fresh tomatoes,
  • 陆 red onion,
  • 1 clove of garlic,
  • 1tsp of olive oil,
  • 1tsp of lemon juice,
  • Pinch of salt
  • 1 tsp of Djembe sauce or other scotch-bonnet based hot sauce

Method:

Chop the garlic and onion into small pieces Wash the chicken drumsticks and place in a freezer bag Add all the above ingredients and shake until the chicken is completely blended with the seasoning.Place the marinated chicken on a baking tray and place in the oven at 250 degrees to cook for 30mns.

Banana plantains:

Remove skin, cut in small pieces and shallow fry (takes approx 10mns).

Salsa salad:

Chop and mix fresh tomatoes, half onion, garlic, lemon juice and olive oil and Djembe or other scotch-bonnet based hot sauce.

Serves 5 people

Ingredients

  • 500g of minced beef
  • 200g chopped tomatoes
  • 1 large onion coarsely chopped
  • 1 large sweet pepper
  • 3 cloves of garlic, crushed
  • 1 tsp of olive oil
  • 1 tsp black pepper
  • 2 teaspoons paprika
  • 1 tsp ground cumin
  • 1 tsp of Oregano
  • 1 tsp basil

To serve:

  • 5 warmed tortillas
  • 300g grated cheddar cheese
  • 200g light sour cream
  • Half fresh tomato
  • Lettuce
  • Djembe sauce or other scotch-bonnet based sauce

Method:

Cook the onion and garlic over a frying pan with the olive oil for 2mns
Add the cumin and paprika, then cook and stir for another 2mns
Add the fresh tomatoes and the mince and cook at high temperature until the colour starts changing. Break any lumps in the process.
Cook for 5mns and reduce heat and simmer for approximately another 5mns or until the mixture is thick.

To serve:

Warm up the tortillas in a microwave for 5 secs each
Divide the beef mixture amongst the tortillas
Add grated cheese, Djembe sauce and light sour cream
Add a side salad using lettuce, tomatoes and onion.
