Food Friday - Boozy Spiced Apple and Pecan Baklava
This week's boozy recipe comes from Hazel Paterson.
Boozy Spiced Apple and Pecan Baklava
You can play around with the filling for this, swap the pecans for walnuts/hazelnuts/pistachios or whatever you fancy.
For the syrup:
130g caster sugar
100ml water
5 tablespoons maple syrup
1 teaspoon vanilla paste
80ml bourbon
For the baklava:
1 x 220g pack filo pastry
300g pecan nuts
1 teaspoon ground cinnamon
Pinch ground cloves
1/4 of a nutmeg, freshly grated
Zest of one orange
2 apples, cored and finely sliced
100g melted butter
Method:
1: Heat oven to 170C. In a food processor blitz the nuts and spices until it looks like a crumble texture, stir in orange zest.
2: Butter a brownie tin then cover base with a couple of sheets of filo, butter again then add 2 more and repeat once more.
3: Add a layer of apples then half the nut mix.
4: Cover with 2 more filo sheets, butter and repeat twice.
5: Add the rest of the apples and nut mixture then one sheet of filo. Butter it and repeat until your filo is used up.
6: use a sharp knife to cut into diamonds or squares then bake for 30 minutes, check after 20 minutes, if the top is browning too much simply cover with tin foil for the remaining time.
7: Whilst it bakes combine your syrup ingredients except for the bourbon in a saucepan and heat over a medium heat until the sugar dissolves. Once it has dissolved increase the heat and boil for 10 minutes before adding the bourbon and setting aside.
