INGREDIENTS

500 g New potatoes
30-40g Chorizo, sliced
1 medium Red or white onions (depending on which you prefer)
Mushrooms (you can leave this out if you want)
Olive oil, a generous drizzle

UTENSILS
Sharp knife
Baking dish & foil or lid
Ìý
METHOD
Wash the potatoes and leave the skin on Slice them – thickness depends on how quick you want them to cook – I suggest 3-4 slices out of each average size new potato Slice or cube the chorizo – sometimes you can buy cubed chorizo you can use this if you find it difficult to cut or slice. Again not too thin and not too thick Optional ingredient - slice the mushrooms – these need to be finely sliced When you’ve prepared the main ingredients lay them out in a dish Drizzle the oil over & mix it all together Put some foil over the top & bake for about 60 mins at 190C, gas 5, stirring the ingredients every 15 mins, take the foil off 5 mins before then end to crisp off the potatoesÌý
Additional tip from Steph Moon add a teaspoon of Smoked Paprika (the best one is from a tin)
