Pre-heat the oven to 350 F, 180 C or gas mark 4Ìý

You’ll need…

3oz lard (or you could use shortening instead)

3oz butter/marg

6oz caster sugar

Add 2 teaspoons of golden syrup

Ìý

Whizz it up in the food processor for approx. 30 sec until the mixture’s light & fluffy. It’ll look a bit like vanilla ice-cream.

Ìý

Add 8oz plain flour

…and 4oz of desiccated coconut

Ìý

Mix again in the food processor or beat it.

Ìý

Add gradually teaspoon of bicarb of soda (dissolved in few teaspoons of boiling water)

add it gradually...pouring it in and the mixture will start to stick together.

Ìý

Put onto greased baking sheets

Ìý

Pick off pieces of dough – approx. the size of a large walnut....then flatten

You can decorate the coconut creams with a cherry or make pretty marks with a fork on the top.

Pop them in the oven for approx. 25 mins.

Keep your eye on them and turn them half way through – so they cook evenly.

Leave to cool on the tray for a few minutes and then get them onto a cooling rack.
