Cod with confit lemon and zhougKen Forrester Workhorse Chenin Blanc, 2019, South AfricaM&S, 拢8.00
Chenin Blanc, or Steen as it was known in South Africa, was for years considered a high volume 鈥榳orkhorse' of a grape, often overshadowed by international varieties like Sauvignon and Chardonnay. But Ken Forrester, known as Mr Chenin, has championed Chenin Blanc for the last 25 years making some of South Africa鈥檚 best from his vineyards in Stellenbosch. This is gorgeous, bright with pear and apricot flavours made from old vine Chenin. A small part has been aged in French oak barrels adding a bit more weight to the wine so it can cope with the outrageously herby earthiness of the zhoug without outshining the cod.

This spicy gem of a dish can take a red as long as it鈥檚 not too tannic. This one, from one of the 10 Crus (named villages that produce the best Beaujolais), is a lighter style of Beaujolais with soft, silky tannins, lots of light, juicy red fruit (think crushed raspberries and dark cherries) and a gentle touch of spice. Made from the Gamay grape grown on some of the highest granite vineyards in the region, giving the wines extra loveliness (a bit more elegant) compared with those from lower down.
