Tom Kerridge invites his dieting gang on a river cruise to congratulate them on what they have achieved and to reveal how much weight they have lost as a group.
For ten weeks, Tom Kerridge has been guiding a group of struggling dieters through a programme of healthy eating and exercise, with stunning results. One by one they are hitting the weight loss targets they set themselves at the start and are feeling happier and healthier. With the experiment nearing completion, there is a party mood amongst the group. To mark the end of their time together, Tom has invited his gang to join him on a river cruise. He wants to congratulate them on what they have achieved and reveal to them how much weight they have lost as a group. He also wants to be convinced that they have lost weight for good, not just for 12 weeks.
Before the party, Tom needs to sort out what to serve for the buffet. People wanting to lose weight often feel sidelined at parties and social gatherings - unable to tuck in to the food that everyone else is enjoying. Or they give in to temptation and feel bad about it afterwards. But Tom believes everyone can share great food together without guilt or negative consequences on the bathroom scales. Tom's recipes this time are all made for sharing. He shows how to make couscous with griddled halloumi and Mediterranean vegetables. The secret for making this dish lower calorie lies in the herby dressing, which Tom makes without using any oil.
Next on the party menu are Tom's pulled pork tacos served with salad and homemade pickled onions. Marinating lean pork shoulder then slow cooking it delivers stunning taste and texture, and there is an ingenious trick for turning a floppy tortilla into a crispy taco shell to hold the pulled pork. And the final savoury dish is a plateful of Tom's delicious falafels with tzatziki dip. Falafels are normally deep-fried but Tom's method for reducing the calorie count is to bake them instead of frying. With a carrot cake for dessert, this looks like a buffet to remember.
