Boxing Day Pie

Ingredients

40g butter (Nigel used unsalted)

1 large onion, chopped

40g plain flour

150ml white wine

450ml milk

1 tbsp grain mustard

250g chestnut or closed cup mushrooms, thickly sliced

2 tbsp fresh flat-leaf parsley, chopped

450g cooked turkey, shredded in thick strips

salt and pepper

900g potatoes (peeled and cut)

75g cheddar cheese (grated)

Method

Butter a 2.2L (3½ pint) based shallow ovenproof dish. (22cm diameter if round, or if rectangular 32.5 x19.5 x7cm approx).

Heat the butter in a non-stick pan over a high heat, add the onion and fry for minute.Ìý

Sprinkle in the flour and blend in the wine, boil for a minute to reduce the wine and allow to thicken.

Add the milk, stirring continuously until smooth, boiling and becoming a thickish sauce.Ìý

Stir in the mustard, mushrooms, parsley and turkey.Ìý Season with salt and pepper.Ìý Tip into a dish and set aside to cool.

Boil the potatoes in salted water until tender (this will depend on the size, you may have cut them up to equal sizes).

Drain and mash with a little milk and butter.Ìý

Season with salt and pepper and spoon on top of the cold turkey mixture.Ìý Spread over evenly and sprinkle with the cheese.

Cook the pie in preheated oven 200C / 180C fan / 400F / gas 6 for about 30-35 mins until brown and bubbling.

Nigel also added a handful of sliced cooked sprouts.Ìý

ForÌýBobbie P, he substituted sliced smoked tofu for the turkey, which he’d previously briefly pan-fried.
