MONKFISH LIVERS WITH GARLIC BUTTER

1 monkfish liver (approx 200g), de-veined and cut into 12 pieces

1 tbsp olive oil

1 clove garlic, finely chopped

50g butter

2 tablespoon chopped parsley

Zest of half lemon

1 tbsp lemon juice

Method

ï‚·

Heat non stick fry pan, season livers, quickly pan fry in oil for 45 seconds on each side

ï‚·

Turn out onto a cold tray

ï‚·

Add butter to pan, when browning add garlic, then parsley and zest, finally juice and season

ï‚·

Return livers to pan and mix together

ï‚·

Serve immediately
