Jo meets an ethical taxidermist who uses her work to educate the public about nature, and also works up a sweat when she meets a group who are using the Giant's Ring as an outdoor gym. Meanwhile, Ruth is in Fermanagh to hear about a scheme that gets people with learning difficulties working on a farm - a vitally important scheme whose future funding is uncertain.
