Cheese Fondue 70's Style

IngredientsÌý
Drizzle of Oil
250g Cheese Cheddar
250g Gruyere Cheese
Knob of Blue Cheese Optional
1 Clove Garlic crushed
2 Shallots Finely Diced
1 Spring Fresh Thyme
Pinch of Fresh Ground Pepper
50g Crème Fraiche
Bread of your choice (Crusty is my favourite)

MethodÌý
Place a pot with water on the heat and bring up to the boil. Put a bowl on the pot so the steam from the water heats the bowl.Ìý
In a pan heat a drizzle of oil and sweat the chopped shallots 5-6 minutes. Add pepper and sprig of thyme.Ìý Then transfer to the bowl. Add the cheese to the bowl and allow it to melt naturally. Stir in the crème fraiche.Ìý
Serve in centre of the table and using skewers with bread dip into the fondue until it’s all gone !!!
