Chicken & Summer Salsa with Basil & a Cheese Crust

Serves: 2 Persons
Ìý
2 Chicken Breasts
2 Sprigs Fresh Thyme
Half a Red Pepper Finely Diced
Half a Yellow Pepper Finely Diced
2 Cloves Garlic Sliced
Half Red Onion Finely Diced
Half a Courgette Finely Diced
150g Chopped Tomatoes
2 Tablespoons Balsamic Vinegar
10 Fresh Basil Leaves
50g Cheese of your Choice
Drizzle of Rapeseed Oil
Sprinkle ofÌý Pepper

Method
Ìý
Butterfly cut the breast of chicken by slicing in half lengthways.
Heat a pan, add drizzle of oil. Then add chicken. Cook for 2-3 minutes on each side.
Season with Sprigs of Thyme & Pepper.
While the chicken is cooking make the Salsa.

For the Salsa
Ìý
In a small pot add a drizzle of Oil followed by the garlic & diced onion. Sweat for a minute then add then diced peppers.
Add the diced courgette and cook for further 2 minutes stirring all the time.
Add the Balsamic Vinegar.
Take Salsa off the heat and add Tomatoes and half the Basil leaves roughly chopped.
Place some of the salsa on top of the cooked chicken breast. Top with grated Cheese and remaining Basil Leaves.
Place under the grill for 1-2 minutes for the perfect crust. Serve with either, Salad, Boiled Potatoes, Rice or Pasta.
