Vibrant Chicken & Crunchy Vegetable Stir Fry






Love is in the Stir Fry

This is the perfect sharing food for a night in on Valentines Night and I鈥檝e included some fresh chili to heat up your night. Prepare the vegetables in advance and you will be able to relax at the table as this only takes 12 minutes to cook and it鈥檚 a vibrant bowl of colour & healthiness.

Serves: 2听 You and your Lover !!听

Ingredients

1 Chicken Breast sliced thinly

2 Cloves Garlic sliced

Knob of ginger (thumb nail size)

Red Chili The Hotter you want it, the more you add

Drizzle Rapeseed Oil

Half Red & Yellow Pepper sliced

Half Red Onion sliced thinly

1 carrot peeled and sliced thinly

Handful of Spinach

2 Spring Onions

2 Broccoli Florets

Handful of Bean Sprouts

Fresh Herbs ( Either Thyme, Rosemary or Parsley)

1 Lemon

Method

Heat a walk for approx. 5 minutes. Add the oil quickly followed by the ginger, garlic and chili. Stir then add the chicken and carrots. Gently agitate for 2-3 minutes. Add in the herbs of your choice.

Add the broccoli and onions, cook for 2 minutes of full heat.

Add in peppers quickly followed by bean sprouts and stirring the entire time cook for approx. 2 further minutes.

Then add the spinach and spring onions and immediately turn off the heat. Stir the spinach and spring onions through the mix and add a good squeeze of half the lemon juice.听

Serve in a large sharing bowl in middle between the two of you !! Enjoy

Brian鈥檚 Tip听

Omit the chicken and replace with courgettes & Aubergene for a vegetarian option.
