Jenny Bristow's Mulled Wine and Cranberry Muffins

Mulled Wine
Great recipe which can be made in advance with the Mulled orange syrup. When required this can be reheated with the addition of red wine or cranberry juice, for a non-alcoholic version.
Ingredients
1.7L (3 pints) water
225g/8oz granulated sugar
2-3 cinnamon sticks
3 oranges
10-12 cloves
2 bottles red wine
1 apple and orange to serve
Method
Roughly cut up the oranges and place in a sauce pan with all the other ingredients, except for the red wine.Ìý Heat gently until the sugar has dissolved, then bring to the boil, simmer for 30 minutes, and strain.Ìý (The syrup can be made up to this stage and then stored in the fridge until required.)Ìý
To serve, return the syrup to the pan, bringÌý to boiling point, add the wine and slice of apple and orange and serve.
Snow-Dredged Christmas Morning Cranberry Muffins
These muffins are a great treat for Christmas morningÌýÌýThese muffins are made by the all in one method adding all the main ingredients to the bowl and beating well.Ìý
Ingredients
150g/6oz butter
150g/6oz caster sugar
3 eggs medium size
200g/8oz of cake-making Self-Raising Flour
25gms/1oz. ground almonds
1 tsp baking powder
100g/4oz cranberries(slightly poached)
25gms.(1oz) walnuts chopped
25g/1oz Demerara sugar to dust
Few drops of vanilla extract
To serve
25gms (1oz) icing sugar
Makes 12
Method
Beat together the softened butter, sugar, eggs and flour until soft and creamy (approximately 2-3 minutes).Ìý Add the vanilla, baking powder, ground almonds and mix along with half the fruit.Ìý Toss lightly.
Transfer to lined muffin tins and spoon the mixture two-thirds full.Ìý Top the muffins/cakes with the remainder of the fruit dusted with Demerara sugar.
Bake in the oven at 190° Gas No 5 for approximately 25 minutes.
Serve hot or cold dusted with icing sugar on their own, or with a little yoghurt.
