500g good quality butcher's mince

4 slices salami, finely chopped

2 gherkins, finely chopped

2 scallions, finely chopped

1 egg yolk

1 tablespoon ketchup

Salt and pepper

Mix everything together well.

Chill and then form into 6 patties.

Grill or fry until cooked through.

Flatbread

125g wholemeal flour

100g self-raising flour

陆 teaspoon salt

2 tablespoons natural yoghurt

100ml lukewarm water

Mix together to a soft dough.

Cover with cling and leave in a warm place for an hour.

Divide into 6 pieces and heat up a grill pan or griddle.

Roll each piece into a sausage and then into a rectangle.

Place on dry hot pan and cook until the dough bubbles. Flip over and repeat. Repeat with the remaining pieces of dough and cool on a wire rack.

Pickled Vegetables

2 large carrots

2 red onions

陆 cucumber

1 pack radishes

4 tablespoons white wine vinegar

1 teaspoon castor sugar

2 teaspoons American mustard

2 teaspoons chopped dill

Whisk the vinegar, sugar and mustard together and season with salt and pepper to taste.

Grate or shave the carrots with a vegetable peeler. Add to the vinegar mixture. Thinly slice the onions and radish and add. Toss around and leave for 20 minutes.

Peel and slice the cucumber and add with the dill and serve.

Thousand Island Dressing

200ml mayonnaise

Juice 1 lime

2 finely chopped scallions

4 chopped gherkins

1 tablespoon American mustard

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

Mix together.
