Ingredients:
1/2 onion, roughly diced
240 g salted butter
whipping cream
1 small broccoli
1 small cauliflower
vegetable stock
100 g flour
salt
pepper

Step 1: Make The Cauliflower Soup
Ìý
Place your diced onion in a pan with 120g butter. Heat on a medium heat to soften the onions. Chop 1 small cauliflower and add to the pan. Heat to soften, then add 50g flour and mix into the soup, making sure it is absorbed. Add some vegetable stock, bring to the boil, then simmer until cooked. Add some whipping cream to enhance the flavour. Use a stick blender to blend ensure a smooth consistency.

Step 2: Make The Broccoli Soup

Place 120g butter in a pan. Heat on a medium heat to soften the onions. Slice the broccoli, maintaining the soft inside part of the stalk. Slice the head of the broccoli into bite sized pieces and add to the pan. Heat to soften, then add 50g flour and mix into the soup, making sure it is absorbed. Add some vegetable stock, bring to the boil and simmer until cooked. Use a stick blender to ensure a smooth consistency.

Step 3: Combine The Soups

Pour the soups together into a bowl simultaneously to maintain the two halves. Serve.
