As the game season starts, Sheila Dillon investigates grouse and pheasant with the help of countryman and writer Johnny Scott.

While game and in particular grouse, was once seen as the food of the privileged gentry, according to the latest Mintel report, it鈥檚 becoming increasingly popular. It鈥檚 comparatively cheap to buy, and it鈥檚 healthily lean. The government has recently simplified the rules on the game season selling and licensing 鈥 what effect is that having?

Sheila finds out how grouse shoots and moors fit into the food and farming landscape in the company of 鈥淐ountryman鈥 Johnny Scott (who co-presented the TV series Clarissa and the Countryman) and also the moor owner, Simon Bostock, as well as Len Walker, a now retired game-keeper and ex-miner.

Armed with a brace of grouse, fresh from the shoot, Sheila visits brothers Jeff and Chris Galvin at their Baker Street restaurant 鈥淕alvins鈥 and watches while Chris prepares the grouse, and Jeff then cooks it.
