How to make rough puff pastry
Skill level
Intermediate
Making homemade puff pastry, with its many layers of delicious buttery flakiness, isn't nearly as difficult as it appears. Rough puff pastry is very forgiving, and the scraggier and more uneven it starts out, the better it will be. It just needs a little time and patience to let it rest between folds, as you create those layers. Use it for the best sausage rolls or savoury pies and pasties.
