Flash-fried salmon with yellow pepper and onion salsa

Ingredients

For the salmon

  • olive oil: ½ tbsp olive oil
  • salmon: 150²µ/5½´Ç³ú salmon fillet, sliced into pieces 0.5cm/½in thick
  • lemon: ½ lemon, juice only

For the salsa

  • pepper: ¼ yellow pepper, finely chopped
  • red onion: ¼ red onion, finely chopped
  • chilli: 1 tsp chilli flakes
  • parsley: 2 tbsp chopped fresh parsley
  • olive oil: 1 tbsp olive oil
  • lemon: 1 lemon, zest and juice

Method

  1. For the salmon, heat the oil in a small frying pan over a high heat and fry the salmon slices for 20 seconds on each side, or until just cooked through.

  2. Remove the salmon from the pan to a serving plate and squeeze over the lemon juice.

  3. For the salsa, mix all the salsa ingredients together in a bowl and serve with the salmon.
