Vegan Jackfruit Wraps
Jackfruit makes a great alternative to meat. I like to serve my jackfruit in a wrap, topped with salad, slaw and fresh coriander. Trust me, they are delicious!
- 1 tbsp olive oil
- 400g tin jackfruit, liquid drained
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tsp dried thyme
- 1 tsp all-purpose seasoning
- 1 tsp jerk marinade
- 4 tbsp BBQ sauce
- 200g tin of chopped tomatoes
- 2 tsp white wine vinegar
- 150ml water
- Salt and black pepper
- Tortilla wraps
- Avocado, chopped
- Tomatoes, chopped
- Dairy free coleslaw
- Coriander, leaves picked
Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...
SERVES 4
1. Preheat oven to 220掳C. Line a deep baking tray with baking paper.
2. With clean hands, push all the seeds out of the jackfruit. This is fun!
3. Pour the olive oil into a large saucepan place over a medium heat. Add the onions and fry for 5 minutes, until softened and starting to golden. Stir with a spatula or wooden spoon to stop them sticking.
4. Add the garlic and cook for another minute.
5. Now for the flavour! Stir in the dried thyme, all-purpose seasoning, jerk marinade, BBQ sauce, vinegar, chopped tomatoes and water. Once this starts to boil, turn down the heat. Cover with a lid and cook gently for 30 minutes.
6. Take off the lid, give it a stir and cook for another 5-10 minutes or until thickened.
7. Carefully spoon this mixture into the lined baking tray. This will be hot so ask an adult for help.
8. Using two forks, tear the jackfruit apart until it鈥檚 all shredded into small pieces. Spread the jackfruit out. Place into the preheated oven and bake for 15 minutes until the edges are crispy.
9. Serve spooned onto a tortilla topped with avocado, tomato, dairy free coleslaw and coriander then all wrapped up, if you like.
