Vegan Banana Fritters
Banana Fritters are one of my favourite sweet treats. I love to serve them with vegan coconut yogurt, lots of yummy fruit and maple syrup.
- 4 ripe bananas
- 50g golden caster sugar
- 1 teaspoon vanilla extract
- 录 teaspoon ground nutmeg
- 4 tablespoons almond milk
- 125g plain flour
- 陆 teaspoon baking powder
- Pinch of salt
- Coconut oil for frying
- Coconut yoghurt
- Maple syrup
- Fresh raspberries and blueberries
Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...
SERVES 12
1. Peel the bananas and mash them in a large bowl with the golden caster sugar.
2. Stir in the vanilla extract, ground nutmeg, cinnamon and salt. Pour in the almond milk and mix well.
3. Now slowly add your flour and baking powder until nice and thick. Leave this to relax for 10 minutes.
4. Melt enough coconut oil in a frying pan over a medium heat to cover the bottom of the pan. Be careful with hot oil or ask an adult
5. Add a large dollop of batter to the pan per fritter. Cook around 3 at a time- you don鈥檛 want them to be crowded. Cook for 2 minutes on each side. Use a spatula to flip them over, they should be golden.
6. Drain on some kitchen paper to soak up any extra oil and repeat until you have used all the mix. You can keep them warm in a low oven while you make the rest.
7. Serve with coconut yoghurt, maple syrup and fresh berries.
