Vegan Apple Crumble
This is a real sweet treat! Delicious squishy apples with a crumbly top! It鈥檚 one of my mum鈥檚 favourite desserts. I love to make this for her - especially when I鈥檓 trying to butter her up!
- 6 large apples- peeled, cored and cut into bite sized chunks
- 240ml water
- 80g brown sugar - for the apples
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon - for the apples
- 1 teaspoon nutmeg
- 260g almond flour
- 50g brown sugar - for the crumble
- 2 teaspoon cinnamon - for the crumble
- 1 teaspoon salt
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 45g vegan butter block- cubed
- Handful of chopped almonds
- To serve : A scoop of vegan ice cream or dollop of vegan cream
Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...
SERVES 8
1.听Preheat the oven to 180 掳C
2. In a large saucepan over a medium heat, add the apples, water, brown sugar, lemon juice, cinnamon and nutmeg. Give it a good stir and keep stirring and simmering until the apples are nice and soft- around 10 minutes.
3. Meanwhile, make the crumble topping. To a bowl, add the almond flour, sugar, salt and cinnamon. Stir.
4. Mix in the maple syrup and vanilla extract.
5. Add the vegan butter. Squash the butter and the dry mixture together with your fingertips until you get crumble. Stir in the chopped almonds for some crunch.
6. Spoon the apple mix into the bottom of an ovenproof dish. Sprinkle the crumble over the top so the apples are completely hidden.
7. Bake in the oven for 30 minutes, or until golden.
8. Serve with vegan ice cream or cream.
