Vegan Samosas
Wow! These samosas are packed with veggies and spice. Us McQueens love to eat them as a snack at home or when we are on the go. I hope you love making them as much as I do!
- 1 pack ready-made filo pastry
- 2 potatoes - peeled, chopped, boiled, drained
- 2 tbs vegetable oil
- 陆 white onion, diced
- 3 garlic cloves, minced
- 1 carrot, chopped
- 陆 green pepper, chopped
- 70g peas
- 10g coriander leaves, chopped
- 1 green chilli, chopped
- 1 teaspoon curry powder
- 1 teaspoon all-purpose seasoning
- 陆 teaspoon black pepper
- 陆 teaspoon ginger powder
- Vegetable oil for frying
- Some water
Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...
MAKES 30
1. In a large frying pan, gently fry the onion in sunflower oil until soft, around 5 minutes. Add the garlic and cook for another 2 minutes, until you can smell the garlicky goodness.
2. Add the chilli, curry powder, all-purpose seasoning, ginger powder and black pepper and cook for 5 minutes.
3. Next, stir in your peas, peppers and carrots and cook for another 10 minutes.
4. Tip into a bowl and mash together with the cooked potato. Season with salt and pepper. Leave this to cool.
5. Unwrap your filo pastry, covering the rest with a clean damp tea towel.
6. Cut the pastry into three even strips. Ask an adult to help you with sharp knives.
7. Place a teaspoon of the filling into the bottom corner. Don鈥檛 put more mixture in as it will fall apart when it鈥檚 cooked. And then fold over so you get a triangular shape. Brush the edges with water so it sticks, then fold again into a neat triangle. Repeat this until all the mixture is used up.
8. Ask an adult to help with this stage as deep frying can be dangerous. Heat vegetable oil to 180 degrees in a large deep saucepan. Line a plate with lots of kitchen paper.
9. Once hot, fry the samosas a few at a time for around 10 minutes, or util golden. Drain on the kitchen paper and repeat until all the samosas are cooked.
