ROAST RED PEPPER WITH PESTO AND GOATS CHEESE

Pesto:

pesto.

A handful of walnuts
bunch of fresh basil
4oz parmesan cheese
4 cloves of garlic
1/4 pint olive oil


1 -
Liquidize dry ingredients and then add oil.

Red Peppers:

1 red pepper
pesto
a piece of brushette bread
a piece goats cheese

1 - Cut the red pepper in half and take seeds out.

2 -
Pour some olive oil on the red pepper and then roast for a few minutes.

3 -
Take the red pepper out of oven and fill with pesto and goats cheese.

4 - Take the piece of brushette bread and cut in half.

5 - Place the red pepper and piece of brushette bread on a baking tray and put in oven for 5-6 minutes on a low gas mark.

6 - Take them out of the oven and put the roasted red pepper on top of roasted brushette bread.

7 - Serve with mixed leaf salad.
