Brot Nollaig Tomàto & Lus-an-rìgh

150 ml crème fraiche

½ liotair stoc circe
4 spàinn-mhòr ola-chroinn-ola

Cuir a’ hama ris agus bruich airson mionaid no dhà.
Cuir am buntàta ris a’ phana agus crathadh dhen phiobair dubh.
Cuir na tomàtothan air an gearradh ris agus measgaich.
Dòirt an stoc circe dhan phana agus teasaich gu ìre-goil, a’ cuir sìos an teas airson goil air a shocair airson dhà no thrì mhionaidean.
Cuir na cnogain de thomàtothan beaga ris.
Cuir am mullach air a’ phana agus leig leis goil air a shocair airson 20 mionaid.
Bleith am brot gus a bheil e mìn, a’ cuir an lus-an-rìgh agus steallag crème fraiche ris aig an deireadh.
Festive Tomato & Basil Soup
3 large tomatoes, core removed and roughly chopped
2 medium onions, chopped
2 x 400g tins of Italian cherry tomatoes
4 rashers smoked streaky bacon, chopped
2 rooster potatoes, peeled and cubed
150 ml crème fraiche
1 handful of fresh basil leaves
½ litre chicken stock
4 tbsp olive oil
Black pepper to season
Heat the olive oil in a heavy based pan and fry the onions to brown.
Add chopped bacon and continue to fry for 1 – 2 minutes.
Add the potatoes to the pan and season with black pepper.
Add chopped tomatoes to the pan and stir through.
Pour the stock in and bring to the boil, simmering for a few minutes.
Add tinned cherry tomatoes.
Put the lid on the pan and simmer for approximately 20 minutes.
Transfer to a food processor, or use hand blender, and blend to a puree till smooth, adding basil leaves and the crème fraiche.
