You may be looking
for a simple recipe to celebrate Valentine's Day without breaking
the budget.
We've got the
answer with these Jammy Heart Cookies, which are fun to make and
quite easy to digest.

Jammy Heart
Cookies
Ingredients:
1/2 cup butter
(4 oz)
3/4 cup icing sugar (6 oz)
1 egg
1/2 teaspoon vanilla extract
1 1/4 cups self-raising flour (10 oz)
Directions:
1. In a large
bowl, cream together butter and icing sugar. Beat in the egg, vanilla
and mix well.
2. Gradually
blend flour into the butter mixture and then divide the dough into
thirds and shape into balls.
3. Roll out
the dough into desired thickness (about 1/4 inch thick is good)
on a lightly floured surface. For each heart cookie, cut out 2 three-inch
rounds. Cut the centre of one of the rounds with a small 1 1/2 inch
heart cutter.
4. Place each
piece separately on an ungreased cookie sheet, 1-2 inches apart.
Bake in a pre-heated 350 F or 175 C oven until lightly browned.
Don't overcook. Check after about 6-8 minutes. Cool on a wire rack.
Spread the bottom layer with jam of your choice (strawberry is our
choice) and place an open-centred cookie on top. Serve the small
hearts as separate cookies.
Makes about
8 heart cookies and lots of little ones.
