Once you
realise how easy it is to make this ice cream you can then experiment
and add what ever you like.
Basic
Vanilla Ice Cream
Ingredients
6 egg yolks
110g caster sugar
50ml water
a few drops of vanilla essence.
225 ml double cream
1. Whisk
up the egg yolks in a mixer until firm and pale and have trebled
in size (about 8 minutes.)
2. Put the
sugar and water in a small saucepan and bring to the boil. Drizzle
the boiling sugar into the eggs while continuing to whisk the
eggs. The heat of the sugar will cook the eggs. Continue to
whisk for a further 2-3 mins.
3. Empty
the fluffy eggs into a large bowl.
4. Clean
out the mixing bowl and whisk up the cream until it is at soft
peaks. Fold it into the eggs trying not to break any of the
bubbles.
5. Add
any other ingredients that you want to flavour the ice cream.
Transfer the ice cream to a container and freeze.
Caramel
Banana Ice Cream
Use brown
sugar instead of caster sugar when making the syrup for the
eggs. Puree two very ripe bananas and fold into the ice cream
at the end.
Lemon
Curd and Meringue Ice Cream
Reduce the sugar by 50g when making the syrup. Fold in half
a jar of lemon curd and some crushed meringues before freezing
the iIce cream.
As
you can see once you have the basic ice cream then the sky is
the limit!
