Simple and healthy apple and
rhubarb crème brûlée

from Tim Brown at By Appointment, Norwich

Serves 4

100g apple peeled and chopped
100g rhubarb sliced
175g fat-free mascarpone or cream cheese
200ml fat free Greek yogurt
75g caster sugar
demerara sugar for the topping.

Method: Cook the apples, rhubarb and sugar in a pan. Divide it into four ramikin dishes. Mix the mascarpone, yogurt and caster sugar in a bowl and put on top of the apple mix. Put the demerara sugar on top and grill until brown and crispy.

Tips: This dessert is so simple and the fruit can be swapped for what ever you want. You can also be slightly naughty and add a shot of alcohol to the yogurt mix before it goes into the dishes.
