This dramatic perennial plant may be grown for its decorative qualities at the back of the border, where its leaves make a fine spreading clump of blue-green foliage, but it is mostly grown for the edible immature flowerheads which are produced from July onwards. Plants are easily raised from seed, or by division in spring. Snails may be a problem for young shoots.
