Simple vegetable broth
Mix up the veg in this easy broth depending on what you've got in the kitchen.

Ingredients
- ½ onion, roughly chopped
- 2 carrots, roughly chopped
- ¼ potato, peeled and roughly chopped
- 300ml/½ pint chicken or vegetable stock
- salt and freshly ground black pepper
- 2 tbsp chopped fresh chives, to serve
Method
Place the vegetables and stock into a saucepan and bring to the boil.
Season, to taste, with salt and freshly ground black pepper and simmer for 10-15 minutes, or until all of the vegetables are tender.
To serve, ladle the broth into two soup bowls and sprinkle over the chives.
