Taleggio toasts with roasted vine tomatoes

Ingredients
For the roasted vine tomatoes
- 6 vine tomatoes
- olive oil, for drizzling
- salt and freshly ground black pepper
For the Taleggio toasts
- 3 slices ciabatta, toasted
- 100驳/3陆辞锄 Taleggio cheese, sliced
- salt and freshly ground black pepper
- 6 fresh basil leaves, to serve
Method
Preheat the oven to 200C/400F/Gas 6. Preheat the grill to medium.
For the roasted vine tomatoes, place the tomatoes onto a baking sheet, drizzle with olive oil and season with salt and freshly ground black pepper.
Transfer to the oven and roast for 10-12 minutes, until softened.
For the Taleggio toasts, top the toasted ciabatta slices with the Taleggio and season with salt and freshly ground black pepper.
Place under the grill for 3-4 minutes, or until the Taleggio has melted.
To serve, place a slice of Taleggio toast onto three serving plates and place two roasted tomatoes on top of each slice. Top with the basil leaves.
