Ingredients

  • sweet potato: 1 small sweet potato, peeled and cubed
  • leeks: 2 baby leeks, finely chopped
  • olive oil: olive oil

Method

  1. Bring a saucepan of water to the boil. Add the sweet potato and boil for eight to ten minutes, or until soft, then drain.

  2. Add the baby leeks to the potatoes and mash together.

  3. Heat a tablespoon of olive oil in a very small frying pan and add the potato mixture. Fry for four to five minutes over a medium heat and then turn out onto a plate to serve.
