Green peppercorn sauce

Green peppercorns are gentler than black peppercorns, which tend to give a spicy edge to peppercorn sauce. If you want a creamer pepper sauce with your steak this is a great recipe to try.

Method

  1. Heat the oil in a small frying pan and gently cook the onion until soft.

  2. Add the wine and reduce the volume of liquid by half.

  3. Stir in the crème fraîche and the peppercorns.

  4. Season with salt and plenty of freshly ground black pepper.
