Easy pea and mint soup
This tasty pea and mint soup is ready in minutes and makes a wonderful summer lunch.
Ingredients
- 1 tbsp olive oil
- ½ red onion, peeled and diced
- 2 garlic cloves, peeled and crushed
- ½ pt vegetable stock
- handful fresh mint
- handful fresh peas
- drizzle cream
- salt and freshly ground black pepper
Method
Heat the oil in a saucepan and sauté the onion and garlic for 2-3 minutes, to soften.
Pour in the stock and bring to the boil. Add the mint and peas. Reduce the heat and simmer gently for 8-10 minutes.
Transfer the mixture to a liquidiser and blend until smooth.
Return to the pan to warm through and add the cream, salt and freshly ground black pepper.
Ladle into soup bowls to serve.
