Cucumber ribbon salad with olive and caper dressing

Ingredients

  • peppers: 2 red peppers from a jar
  • olives: 1 tbsp black olives
  • capers: 2 tbsp capers, drained
  • olive oil: 3 tbsp olive oil
  • white wine vinegar: 1 tbsp white wine vinegar
  • lemon: 陆 lemon, juice only
  • parsley: 2 tbsp chopped fresh parsley
  • cucumber: 陆 cucumber, de-seeded and cut into ribbons with a peeler

Method

  1. Place all of the ingredients except the cucumber in a food processor and pulse until smooth.

  2. Place the cucumber ribbons into a bowl and drizzle over the dressing. Toss well to coat then transfer to a plate to serve.
