Coconut and mango smoothie

Ingredients

  • mango: 100²µ/3½´Ç³ú mango, peeled and chopped
  • honey: 2 tbsp runny honey
  • yoghurt: 50g/1¾oz soya yoghurt
  • soya milk: 100³¾±ô/3½´Ú±ô´Ç³ú soya milk
  • coconut milk: 100³¾±ô/3½´Ú±ô´Ç³ú coconut milk
  • 1 small handful ice
  • lime: ½ lime, juice only

To serve

  • mint: sprig of mint

Method

  1. Blend the mango, honey, yoghurt, soya milk, coconut milk, ice and lime juice in a liquidiser until smooth.

  2. Pour into a tall smoothie glass and garnish with a mint sprig.
